Step 1 | Add 1/2 tsp of extra-virgin coconut oil, 1/2 cup rice, 1/2 cup of chopped carrots, 4 tbsp of cooked chickpeas, 1 cup of broccoli florets, 3/4 cup of water, 1 tsp of curry powder, 1/4 tsp of ground tumeric and 1/4 tsp of salt, |
Step 2 | Cook with "Rice" mode. |
Step 3 | Cut 1 aubergine and 1 bell pepper into slices. Place onto a baking pan with baking paper. Add olive oil, black pepper and sea salt. |
Step 4 | Bake at 325F for 20 to 25 mins. |
Step 5 | Add with curry rice cooked in step 2. |
